摘要: Silkworm pupae, a traditional medicinal and edible insect resource, have garnered significant attention because of their rich content of unsaturated fatty acids (UFAs). Enzymatic enrichment of UFAs in glycerol phospholipids will greatly improve the bioaccessibility of UFAs. However, to meet the nutritional needs of functional foods, the ratio of w-6/3 polyunsaturated fatty acids (PUFAs) in structural phospholipids (SPLs) needs to be adjusted to the ideal ratio of 4:1. Soybean phospholipids (SP) were selected as glycerophospholipid donors to enrich alpha-linolenic acid in silkworm pupae oil (SPO). Ultrasonication significantly accelerated the enzymatic transesterification process, reducing the reaction time by 62.5%, from 16 h to 6 h. To achieve an optimal w-6/3 PUFAs ratio in the SPLs, the w-6/3 ratio was found to be 4.2:1 after optimizing the reaction conditions. Furthermore, the relative content of alpha-linolenic acid in the SPLs increased by 140.24%. These improvements were obtained under conditions of 5% enzyme concentration, a substrate mass ratio of 1:5, and a reaction temperature of 55 degrees C for 6 h. Additionally, in vitro digestion characteristics and the nutritional value were evaluated. In addition, the maximum fatty acids release rates of the SPLs and SP were 36.23 +/- 0.08% and 34.72 +/- 1.47% (p > 0.05), indicating that the w-6/3 PUFAs ratio did not significantly affect fatty acid release. Thus, a novel effective upgrade process for SPLs with an ideal w-6/3 PUFAs ratio and rich in alpha-linolenic acid was proposed, which will provide a new strategy for the utilization of high-quality oil resources in edible insects.
